camping leftovers salad: pan seared ribeye, castle rock cave aged blue, english breakfast radishes, garlic scapes, mixed greens, & hamburger bun croutons.

white pizza - base layer of local garlic brebis (sheep milk cheese), bacon fat fried chicken breast, scallion, & mozzarella. topped with fresh chives & cracked black pepper.

smoked pork rib & monterey jack quesadilla with a bbq-ranch side salad.

applewood smoked, apple cider mopped baby back ribs, chive sun choke & red potato, and sweet corn.

classic sans box: homemade tuna helper - sauce of cream, sour cream, local organic monterey jack, & romano - topped with fresh broccoli & csa scallions.

banana & roasted pecan muffins topped with a cream cheese glaze.

scratch swedish meatball & ricotta herbed crust pizza.

scratch jerk chicken over appleton rum black beans.

saint louis(ish) style pizza - pepperoni, onion, & provel.

the provel consists of processed cheddar, swiss, & provolone (shut up it’s amazing) and can only be found on the stl area. the traditional stl style crust is cracker thin, but i prefer something between thin and ny style - so i whipped up a quick rise dough with half the yeast and tossed it immediately after pulling from the mixer. with the exception of a couple of air pockets in the crust, it stayed very thin and crisped nicely while retaining just a touch of chewiness. i call it a win.

chicken legs & thighs on top, olive oil & kosher salt potatoes on the coals.
